Ingredients:
- 1.5 C long grain rice
- 1 t butter
- 2 cloves of garlic, minced
- 2 t lime juice
- pinch of salt
- 2.5 C chicken or vegetable broth
- 1 T lime juice
- 2 t sugar
- 1/4 C cilantro
Cooking:
- Place rice, butter, garlic, 2 t lime juice, salt and broth in a stock pot (I just used a rice cooker). Boil. Reduce heat. Cover and simmer until rice is tender, about 15-20 minutes.
- Combine 2 T lime juice, sugar and cilantro. Add to rice while fluffing with a fork.
